100% Chardonnay on limestone sloped soil on both sides of the river “Le Serein”
Old-style Chablis from the North. Florence and her husband François are 8th generation farmers with eighten hectares in Villy. Most of their vines are betwen 60-80-year-old including a tiny slice of the Chablis Premier Cru “Les Fourneaux”, the only Premier Cru to face due South. Their old-vine and Premier Cru are aged in mostly old barrels, while their textbook AOC Chablis, is aged exclusively in tanks for 5 to 9 months, before being filtered and bottled on the estate.
Aromas of green apple, lemon, and a hint of minerality. On the palate, the wine is crisp and refreshing, with flavors of citrus & pear with a touch of flinty minerality. The wine has a bright acidity and a long, clean finish typical of the Kimmeridgian soils.
